I’m a big fan of kiwis for many reasons. The dietitian in me certainly appreciates their nutritional profile (did you know that one serving of SunGold kiwifruit provides 3x more vitamin C than an orange and as much potassium as a medium banana?), but I also love how portable and cute kiwis are! It’s a easy snack to take on-the-go, because as the Zespri folks say…you just have to cut, scoop and enjoy!
I’m now the proud owner of this kiwi spoon, but for years I’ve just been eating the fruit whole, as is! I’m one of those people who just rinses and devours kiwis, fuzzy skin and all. Which is totally fine to do, by the way! The skin is safe to eat and actually provides a good amount of fiber. Different than it’s tangy green cousin, the new SunGold variety from Zespri have a smooth, hairless skin, bright yellow flesh and tropical-sweet flavor. The SunGold is one of the fastest growing new fruits available around the world, which makes sense because it’s delicious and surprisingly versatile when it comes to cooking.
Both the green and SunGold varieties contain an enzyme called actinidin (unique to kiwifruit), which helps break down proteins. This means, in addition to using kiwi as a snack or in desserts (we’re almost to my recipe, I promise!), it makes a great meat tenderizer. Simply peel and mash kiwifruit over meat or incorporate it into a marinade! Actinidin also breaks down the protein in dairy, so if you mix kiwi with dairy products in a recipe, it should be consumed right away.
When The Recipe Redux challenged us to surprise and delight our readers with a new SunGold Kiwifruit recipe, I had so many ideas swirling around in my crazy brain. As you all know I love pancakes, I thought about trying a kiwi syrup for pancakes and waffles. Then, my mind went to tacos and I wanted to come up with a kiwi salsa. It’s a good thing I didn’t, because there are some delicious kiwi salsa recipes in the links below! In the end, after moving from breakfast to lunch/dinner, I settled on dessert! Using just bananas, coconut milk and kiwis, a refreshing tropical summer treat that is sure to satisfy your sweet tooth was born. These SunGold Kiwi Coconut Popsicles are made with just three ingredients and come together in no time. If you don’t have a Popsicle mold, you can still blend everything together and freeze in a container or pour it into an ice cream maker for a Kiwi Coconut Sherbet!
- 4 SunGold Kiwis*
- 1 cup coconut milk
- 2 bananas
- unsweetened coconut flakes (optional as garnish)
- Place all ingredients into blender or food processor and blend until smooth.
- Pour into popsicle molds and place in freezer for 2-3 hours or until frozen.
- When ready to enjoy, remove from popsicle mold and sprinkle with unsweetened coconut flakes, if desired.
