Holla for these new hummus spreads from Sabra! In convenient squeeze bottles, they are the perfect way to top off sandwiches, adding healthy fats, fiber and protein to boot. Plus, they’re really flavorful and have 75% less fat than mayonnaise. Sabra Spreads come in 3 flavors: Garlic Herb, Sea Salt and Cracked Pepper and Honey Mustard. I popped them all open at once and squeezed a little of each onto my finger to sample right away. I love hummus, so I wasn’t all that surprised when I tasted each of the spreads and loved them too.
As I brainstormed sandwich recipes for this post, I knew I wanted to use the spreads for more than just a schmear on the bread. I thought about other sandwich tweaks I often make, like using leafy greens instead of tortillas as a wrap or subbing in avocado for mayonnaise in tuna salad. Aha! Maybe these spreads would work well as another alternative to mayo in protein salads.
While I truly loved all of the Sabra Spreads, my favorite is the honey mustard. Honey mustard is my jam, but only if it has that perfect combo of sweetness and spice. The diner I worked at in college had the best honey mustard dressing and I can remember dipping my french fries into endless amounts of it every shift. #nutritionstudent 😉 During brainstorming, modern-day-Kim vetoed the idea of a french fry sandwich with honey mustard spread, though I’m sure that would go over well in some crowds. I started thinking about what proteins go well with honey mustard and landed on salmon.
For the salmon salad, you can use a piece of fresh salmon or take the easy way out and pick up some canned salmon. My tip for finding the most eco-friendly, sustainable option is to look for “wild alaskan” on the can. You can also refer to the Marine Stewardship Council for all sustainable seafood options. I put the Honey Mustard spread to work, binding the salmon flakes together and then added chopped walnuts and cranberries for more texture and flavor.
You already know that salmon is a good source of protein and omega-3 fatty acids, so it’s a satisfying and filling choice. Add in the hummus spread for even more healthy fats, protein and fiber. On top of that, sprinkle in walnuts and you’ve got a well balanced recipe going on. Protein-check. Fats-check. We just need some carbs!
Sure, the spread has some carbs, but this sandwich needs bread. I chose a toasted sourdough bread for the base, because I think nice crunchy breads go exceptionally well with with softer salads. Don’t forget to add a little extra honey mustard spread right onto the toasted bread before assembly for best results! Next, layer a little spicy arugula (good contrast to the sweetness in the honey mustard and cranberries), sliced tomato and finally the salmon salad mixture. Top with more arugula and the other slice of sourdough, and voila! The most delicious Honey Mustard Salmon Sandwich you’ve ever tried. Enjoy!
- 12 oz salmon, canned (or fresh, cooked and shredded)
- 1/4 cup Honey Mustard Sabra Spread
- 1/4 cup unsweetened dried cranberries
- 1/2 cup walnuts, chopped
- 4 slices sourdough bread, toasted
- 1-2 teaspoons Honey Mustard Sabra Spread for bread
- 1/2 cup arugula
- 1 medium tomato, sliced
- In a bowl, combine salmon, honey mustard spread, cranberries and walnuts.
- Squeeze approximately 1 teaspoon of honey mustard spread on each slice of toasted bread.
- To assemble sandwich, layer arugula, sliced tomato, salmon salad and remaining arugula on two slices of bread. Top with remaining two slices and serve.
